Crock Pot Chicken Tacos

This is another super easy crock pot dish that will probably last you days! In total with chicken and all vegetables, it probably costed $18 dollars. But we did use all 6 chicken breast, if you don’t use all of them then you save a bit of money on the dish. Plus this will be being ate for Lunch and Dinner today, and then probably lunch for us tomorrow! These can be ate on hard/soft shell tacos, over a nice bed of rice, or even with tortilla chip as a hearty soup! It is quite diverse in however you would like to serve it!

Ingredients:

  • 1 full Green Pepper – optional if you or your family does not like green peppers.
  • 1/2 chopped onion – can be substituted with onion powder if your family doesn’t like onions.
  • 2 packages of taco seasoning (for 6 chicken breasts, if 3 or less one should be fine) – Whichever you prefer, we used two different types.
  • 2 cans of diced tomatoes with green chilies – Now if you aren’t a tomato fan and don’t want these in your recipe, you might want to just add a little bit of water into the bottom of your crock pot.
  • 1 can of black beans – Again, optional.
  • 6 chicken breasts – Now we did 6 because we are planning on eating this for lunch and dinner, can adjust to suit your family.

Steps:

  1. Clean and chop vegetables into bite size pieces and open all cans to have them set aside to pour over chicken.
  2. I sprayed a little Pam around the crock pot to help with nothing getting too baked onto the sides.
  3. After vegetables are finished, begin cleaning and washing off chicken.

  4. Line the bottom of the crock pot with cleaned chicken breasts.

  5. Begin to coat the chicken with your seasonings!

  6. USE TONGS TO MIX ONTO CHICKEN! I made the mistake of using my hands and after many hand washes, a shower and lotion, my hands still smell like the seasoning, so please don’t make the same mistake as me! HAHA
  7. After you have finished coating all the chicken breast, now begin to add all of the vegetables.

  9. Cook on Low for 6-8 Hours ; I made mine the night before and left it in the cooker all night because I planned to eat mine for Lunch.

    When I checked the next Morning!
  10. I simply took a regular fork and was able to easily tear the chicken up into shreds!
