So this weekend was extremely busy for me! On Friday night, I TRIED to make some Mini Pineapple Upside-down cakes. That did not turn out well AT ALL! It turns out that my cupcake pan did not have the depth I needed to fit all the ingredients that I wanted too. It started overfilling and I ended up smoking up the entire house haha So I will revise this sometimes this week, might just make it a loaf as intended but if I can find a better cupcake tin, the minis will be done! This recipe includes flour, sugar, baking soda, can of circle cut pineapples, can of crushed pineapples, maraschino cherries (if the cupcake pan allows me),  water, coconut, eggs, brown sugar, and butter. If you didn’t want to make your own batter for the cake itself, you can purchase a box of yellow cake mix.

I will also be doing a recipe for a Crock-Pot Lasagna, so I am really excited about that! It will include ground beef, ground Italian sausage, ricotta cheese, Parmesan cheese, mozzarella cheese (lots of cheeses 😛 ), whichever pasta sauce you like, and lasagna Noddles! This should be another quick and easy dinner recipe for a busy day!

I also want to make a Home-Made Ice Cream (without using a ice cream machine!). This is going to be SUPER simple! All you will need is sweetened condensed milk and heavy cream, along with whatever you want in your ice cream (oreo cookies, vanilla, chocolate, peanut butter, etc.). I will be using a handheld mixer as well.

I recently received a new pressure cooker from my mom at the end of last week. I am really hoping, with trial and error I’m sure, to figure out how to make my own home-made jarred foods! Pickles are one of my favorite snack foods and if I can figure out how to make my own that would be amazing! They also have a recipe for home-made apple sauces! I don’t know if I will get around to that this week, but I definitely want to see what I can do with this new contraption!
