Red Velvet Cupcakes with Cream Cheese Frosting

So last week I received a 50% off coupon to Red Velvet NYC. This company sends you the ingredients to make gourmet desserts in your kitchen. Since I am terrible at baking, I thought I’d give it a try. I didn’t really take pictures of my process because I have to concentrate when I am baking. I get really nervous when I know things have to be done a certain way, or everything could turn out awful hahaha So I listed the instructions that the company gave me, and then little notes on what I did.

When I received the package the contents were warm. I was a little worried since it included buttermilk, butter, and cream cheese. Luckily nothing had spoiled, but I thought that was a little weird.

Ingredients they Ship:

They didn’t list the measurements. In Hindsight I wish I would have measured everything out, so I could duplicate it at home again. I’m gonna see if I can find the exact measurements.

  • CAKE FLOUR
  • DUTCH PROCESS COCOA
  • SALT
  • BAKING SODA
  • DISTILLED WHITE VINEGAR
  • GRANULATED SUGAR
  • VEGETABLE OIL
  • RED GEL-PASTE FOOD COLORING
  • VANILLA EXTRACT
  • BUTTERMILK
    FOR FROSTING:

  • BUTTER
  • CREAM CHEESE
  • CONFECTIONER’S SUGAR
    PROVIDED:

  • PLASTIC PIPING BAG
  • CUPCAKE CUPS (24)
    FROM YOUR PANTRY:

  • 2 EGGS

Steps:

So I did this pretty well. Of course I added the flour and buttermilk all at once. But it didn’t mess anything up. Thank God.

Had to leave in a little bit longer, but they came out perfectly!

I added a little extra vanilla from my cabinet. I like my frosting a little bit sweeter.

On the first cupcake I tried to put the frosting on, it slid right off. It was still too warm.

They turned out great! I couldn’t be more pleased! πŸ™‚

Overall Β I am pretty pleased with how everything turned out. I was a little concerned in the beginning when everything first arrived, but everything seemed to work out great!

Unfortunately I don’t have a coupon to share with you guys 😦
